Asian Beef & Broccoli

This past Christmas my parents ended up getting the hubs and I an Instant Pot for Christmas. Not going to lie, I was definitely scared of owning a pressure cooker. What if I couldn’t figure it out or it didn’t work correctly and just “blew up”?!?!? For the longest time I kept it in the sideboard in the dining room waiting until I had the time to figure it out. To this day if I had not have received it as a gift, I probably would not have bought it for myself as I don’t really get into the newest gadgets (although I am far behind on this one). While I am still learning all the different dishes you can make in an Instant Pot, I have felt comfortable enough to “wing” this amazingly simple Asian beef tips dish.

A few weeks ago I stumbled upon my favorite steak marinade. Unfortunately I can’t remember where I adopted this recipe from, or else I’d link it here. We ended up buying a ton of beef tips on sale at Sam’s Club and I really wanted to try and make an Asian beef dish. We marinated the beef for a couple of hours and then seared them on the stovetop. The flavor was amazing, but the beef texture was just “ok.” After having cooked stew with the same beef in the Instant Pot and getting amazingly tender meat in record time, I figured I’d give this Asian beef dish a try in the Instant Pot. And it didn’t disappoint!

Ingredients:

1 lb stew beef/beef tips/cubed sirloin

1/4 cup soy sauce

1 garlic clove, chopped

1/4 tsp ground ginger

1 TBSP molasses

juice of 1/2 lime

pepper, to taste

Directions: Place beef tips in a shallow dish. Mix all ingredients together in a small bowl, then pour over beef tips. Marinate for at least 2 hours. Using the sauté mode on the Instant Pot, pour a little bit of olive oil in the bottom of the pot and brown the meat. After browning, pour the remainder of the marinade into the bottom. Close the Instant Pot lid, and with lid set to “sealing”, set Instant Pot to “meat” setting for 15 minutes. Once the timer went off, I did a “quick-release” of the Instant Pot lid.

While meat was cooking I steamed some broccoli and cooked some rice to serve alongside the Asian beef. You can drizzle the marinade from the pot onto your dish or serve it with some soy sauce!
