Air Fried Apple Cider Donuts

I’ve relied quite heavily on the blog for indexing the recipes I’ve made that I absolutely love. I refer back often to be able to quickly find something I want to bake or cook. I’ve made these donuts twice now and absolutely love them! I hope you do too! This recipe makes ~16 donuts.

Ingredients:

  • 2 cup apple cider
  • 3.5 cups all-purpose flour
  • 2/3 cup packed brown sugar
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 large eggs, room temperature
  • 6 TBSP butter, melted and cooled

Coating:

  • melted butter for coating
  • 1/2 cup granulated sugar
  • 2-3 tsp ground cinnamon

Directions:

  • In a medium pan, bring apple cider to a rapid boil. Cook until reduced by half; ~10-12 minutes. Cool completely. Making concentrated apple cider is the key to creating great flavored donuts. It’s ok if you over-reduce as you can always add more apple cider to bring the concentrated cider up to 1 cup.
  • Mix together flour, brown sugar, baking powder, salt, baking soda, and spices.
  • Create a “well” in the center of the flour mixture. Add eggs, melted butter and cooled cider into the “well”. Mix from inside the “well” to the outside edges of the bowl until a sticky dough forms.
  • Cover dough and chill for 30 minutes or until firm enough to work with.
  • Place dough on a floured surface. Roll dough to 1/2″ thick and cut with a donnut cutter (or a circular cookie cutter if you are me!). To create donut holes, I just used a TBSP to scoop out the middle of the donut!
  • Spray air fryer racks with non-stick spray. Place donuts on air fryer racks (as many as able to). You may have to cook in batches.
  • Set air fryer to 370 for 8 minutes. Flip and cook other side at 370 for 4 minutes.
  • While donuts are cooling slightly, melt butter for coating and mix sugar and cinnamon in a shallow plate.
  • When donuts are cool enough to handle use, use a pastry brush to coat each donut. Roll donuts in cinnamon-sugar mixture.

These donuts are best fresh, but they can be kept in an air-tight container for a few days. Reheat donuts in microwave 10-15 seconds.
