I’ve been baking more recently (it might be due to the chilly weather), and I happened to stumble upon these amazing s’mores cookies! They only look super fancy and complicated, but they are really actually quite simple! If you have a sweet tooth, these will definitely fulfill that need! All you’ll need is your favorite chocolate chip cookie recipe and some toppings!
I actually had some mini marshmallows I needed to use up and was going to try and make some cupcakes with a marshmallow topping, however most marshmallow frostings called for marshmallow fluff, which I didn’t have. I just wanted something easy to fulfill that sweet tooth and use up some ingredients I already had on hand – then I remembered this email I got from a food blog I follow regarding s’mores cookies!
You can either use Pillsbury frozen cookie dough, your own favorite chocolate chip cookie recipe, or my favorite chocolate chip cookie recipe I’ve included in the instructions below!
Chocolate Chip Cookies
1.5 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter (room temp! – not softened or melted)
1/2 cup light brown sugar
6 TBSP sugar
1 large egg
1 tsp vanilla extract
1.5 cup semi-sweet chocolate chips
Toppings
mini marshmallows
semi-sweet chocolate chip cookies
graham crackers, crushed (I didn’t have graham crackers, but I had cereal, so I used crushed cereal instead!)
Directions
Preheat oven to 350 degrees Fahrenheit. Spray 2 baking sheets with non-stick spray. In a bowl, mix the flour, salt, and baking soda together. Set aside.
In a separate large bowl beat together butter and sugars until smooth. Add in egg and vanilla extract and beat on low speed just enough to be mixed together.
Gradually add the flour mixture to the large bowl mixing until just incorporated (I just used a regular old spoon for this step). You do not want to over-mix. Add chocolate chips until just incorporated.
If dough is warm, chill in the fridge a few minutes before baking. Using a large heaping tablespoon, drop the dough onto the cookie sheets. Bake the cookies 1 cookie sheet at a time for 8-10 minutes (small cookies) or 13-15 minutes (large cookies), until the bottom and edges are brown and the tops feel firm.
Let the cookies cool 5 minutes before moving to a wire rack to cool completely. If you’d like to then add your s’mores topping you can just wait for the cookies to cool 5 minutes in the pan before proceeding to the next steps. This batter will make between 12-18 cookies depending on the size of your cookies.
Toppings
Shut off oven and turn on broiler. Place 8-10 mini marshmallows on the top of each cookie. You may need to push them slightly into the cookie in order to get them to stay on. One baking pan at a time place cookies back in oven until the marshmallows have browned on top. Watch very closely as they will burn quickly! Mine took no longer than 2-3 minutes to get the browned top I was looking for. Remove the cookies from the oven and allow them to cool completely on a cooling rack.
Once cookies have cooled, melt the chocolate. I probably used about ~1 cup of melted chocolate chip cookies total. Warm the chocolate in the microwave in 30 second intervals until smooth and fully melted. You can dip each cookie in the chocolate, but I found it to be super messy and required a lot more chocolate, so I ended up spooning chocolate over the lower half of the face-up cookies. Place the cookies on parchment paper. Sprinkle crushed graham cracker (or cereal!) over the chocolate. Let the chocolate set before moving cookies to a container.
